That would be the second most amazing thing I could imagine right now, second only to playing a summer Phish tour. If you’ve ever sent a missive to Phish HQ, there’s a good chance you received a reply from the intrepid Betty Frost, who has worked for the band for over 25 years. Betty’s career with Phish began when she delivered a muffin basket to Mike Gordon’s accountant, and the rest is history. An avid amateur cook, Betty once handily won a pie-baking competition at Vermont’s Champlain Valley Fair. This week, Betty turns to some family recipes for a special ‘Greek Night’: Spanakopita, Lamb Meatballs and a Watermelon Salad.

On May 1, 1989, Phish played the Universal Joint in the basement of Pearl Street — a club in Northampton, MA located downtown at 10 Pearl St. in a space subsequently known as 10 Below. It was an all-ages show with $6 tickets and an extra $2 charge for those under 21. This was a formative time for Phish, who were just about to release their first official studio album, Junta. This Tuesday’s Dinner and A Movie features a 67-minute Set II from that night, and marks the first time it has ever been shown publicly. Page offers up his recollections below, as well as bringing us this week’s recipe for a classic burger, plus a pasta salad and millet cakes.

Burlington’s beloved Penny Cluse Café has been serving up breakfast and lunch for over 22 years and a long line for a table is a regular sighting and well worth the wait. While Mike wanted us to make clear that while his regular order (“the salad with grilled tofu and corn and peanut dressing and a side of sautéed spinach with mushrooms and pesto”) is on the healthier side, he thought some of Penny Cluse’s signature breakfast dishes might be more fitting: biscuits with herb gravy and their gingerbread pancakes. The biscuits and gravy are often ordered with 2 eggs, any style. Enjoy!

For the dinner component of this Dicks-pectacular, we’ll be offering recipes each night from some of the best chefs in the country. Beyond being known for their incredible talent and innovation, these three chefs have something else in common: they’re all Phish fans. On Friday, Mark Welker and Mike Pyers (the executive pastry chef and culinary director at Eleven Madison Park, respectively) bring us “The Wedge” salad, a red pepper pan pizza and a spiced zucchini cake.

Instead of one full show, we’ll present a triple feature of Phish’s Halloween costume sets over the years. First up is “Chilling, Thrilling Sounds of the Haunted House”, from 2014 in Las Vegas. Then we’ll go back to 1996, to The Omni in Atlanta for Talking Heads’ “Remain in Light”, before finishing off the evening back in Vegas as Phish performs Kasvot Växt’s groundbreaking “í rokk” from 2018. Phish will perform three full sets this New Year’s Eve, LIVE from the Ninth Cube. The show will be performed without an audience and will be webcast for free on Phish’s YouTube channel and LivePhish.com, with a simulcast on Phish Radio on SiriusXM. Phish will take the stage promptly at 8:30PM ET on December 31st. This show is part of Phish’s Dinner And A Movie series, and so there shall be dinner! The recipes were chosen by the band and feature Trey’s own recipe for Lemonade, a Whole Roasted Chicken with Lemon, a Lemon Pasta vegetarian entrée, and for dessert: Lemon Bars. Recipes are below.
